1/2 cup plain Greek yogurt
1/4 cup BBQ sauce (+1/4 cup if using dry pulled chicken)
1/4 tsp celery salt
1 (16 oz.) pkg. Curly’s BBQ Pulled Chicken
1/2 red bell pepper, diced
1/4 cup corn kernels
1 green onion, diced
4 slices cheddar cheese (optional)
1. In a medium bowl, combine the yogurt, BBQ sauce, and celery salt. Set aside.
2. In a large bowl, toss together Curly’s BBQ Chicken, pepper, corn, and green onion. Stir in the yogurt mixture until evenly distributed.
3. Serve however you enjoy eating chicken salad. I served mine on a bun topped with spinach, cheddar cheese, and a side of potato salad.
